Cahoots was founded on the idea that collaboration makes great beer even better. We consider the people who drink our beers to be part of our brewery, too. Naming beers, recipes ideas, homebrew contests-- these are just a few ways that we love to collaborate. We will also host events at our taproom providing a space for local professionals, artists and community members to collaborate. What’s better than sharing beer together?

No S'more

No S'more

9.1% ABV • IMPERIAL STOUT

The first beer we ever made, the No S'more Imperial Stout is now an award-winning and highly-ranked stout. This beer started as an attempt to make a s'mores flavored beer, but after a grain mistake and an abundance of munich malt, it wasn't fully what we expected. It's no s'more beer, but it's a great stout. It has notes of toasted vanilla, whiskey barrels, and chocolate malt, with 60 IBU. and 9.1% ABV.

9.1% ABV • IMPERIAL STOUT

The BA version of our No S’more Imperial Stout is aged in bourbon barrels, and has a very well-rounded taste profile. 

Barrel-Aged Rabanas

Barrel-Aged Rabanas

11.1% ABV • Belgian-Style Ale

Rabanas is a Belgian-style ale brewed with pineapple, rhubarb, and orange peel, aged in Pinot Grigio barrels. The name Rabanas comes from the Dutch words for rhubarb (rabarber) and pineapple (ananas). This wine-like beer is 11.1% ABV and 19 IBU. A special thanks to Julie Borré for the name of this beer!

9.7% ABV • Imperial IPA

This beer started out as a home brew collaboration between our founder and his dad on July 4th. What better way to celebrate, right? It is a double IPA with a strong hop flavor complimented by the juicy flavor of raspberries. It’s a great summer beer, coming in at 9.7% ABV and 80 IBU.

This unique barleywine is made with a blend of English and American ingredients, then barrel-aged in American bourbon barrels. 10.1% ABV and 93 IBU

The BA version of our AmEn! barleywine, this well-rounded beer was aged in bourbon barrels, which add sweet, complex notes to the flavor profile. It is 11.1% ABV and 93 IBU.

Blue Liner

3.1% ABV • BERLINER-STYLE WEISS 

This Berliner-style Weiss is our take on a traditional German-style sour beer yields a refreshing, tart brew with a lemony-citrus fruit sharpness that always leaves you wanting another sip. Enjoy as is, or mixed with traditional syrups or in a beer cocktail. Regardless, the acidity pairs well with salty and sweet foods alike.

8.5% ABV • SPECIALTY ALE 

Imagine you’re sitting on a beach in the Caribbean with a lime and ginger flavored carbonated beverage in your hand: the waves crashing and a light breeze blowing over the beach. Now allow Dark & Stormy to take you there. This beer was inspired by the delicious drink that shares its name. Barrel-aged in rum barrels, and brewed with lime zest, ginger and spices. 8.5% ABV and 40 IBU

5.0% ABV • KÖLSCH-STYLE ALE

Named after Chicago summers—they are cruel, because they are always too short. Our Kölsch-style ale makes every season feel like summer, with a delicately balanced malt profile and slightly sweet graininess.  Hints of floral and spicy old-world hops that provide just the right amount of balanced bitterness. This classic style beer originated 100 years ago in Cologne, Germany. It is a crisp, refreshing and easy to drink beer. 5.0% ABV and 20 IBU

5.0% ABV • KÖLSCH-STYLE ALE 

The name says it all. This Kölsch-style ale has a light, refreshing taste, and a good balance of sweet & hops. Our take on a traditional German beer.

The Taproom

We are currently in the process of building out our brewery and taproom, where we will soon start brewing all of our beers. We’re excited to have a space to call our own in historic Oak Park. 

Just west of downtown Chicago, the Oak Park area is rich in cultural history and we think it’s a great place for a brewery. We plan to have food trucks visit outside the taproom and plenty of fun events throughout the year.
